How to cure kalchatti for cooking- Rub any cooking oil all over the kalchatti -inside and out. Let it soak it all in for two days. Smear more oil as it soaks in. Immerse the kalchatti overnight in plain cold water. Remove and keep aside in the morning. Pour hot kanji (starch water drained from cooked rice) into the kalchatti and keep it aside until next day. Repeat this process by empting and refilling with hot kanji for 3-4 days. Now the kalchatti is ready for use.
